      I've been making Chicken, Apple, and Fresh Sage Sausage Patties for years, and with locally grown apples available this month, it was the perfect time to make them again.  I served the sausage patties for dinner with roasted fingerling potatoes and a salad of arugula, cherry tomatoes, and bufala mozzarella (recipe HERE).  But usually these sweet little sausages are part of breakfast or brunch at my house.  Definitely a healthy alternative to many breakfast sausages.

        + Chicken, Apple, and Fresh Sage Sausage Patties +
                                            an adapted Martha Stewart recipe

• 1 tablespoon olive oil, plus additional oil for cooking sausages
• 1 small onion, finely diced
• 2 apples, peeled, cored, and cut into 1/4-inch dice
• 1 pound ground chicken (I prefer dark meat)
• 1/3 cup fresh sage, finely shredded
• 3/4 teaspoon fresh ground pepper
• 3/4 teaspoon kosher salt
• pinch of cinnamon
1.  Heat the olive oil in a medium skillet.  Add the onion and sauté several minutes, until soft.  Add the apples and continue to cook until they just begin to soften.  In a large bowl, combine the onion-apple mixture with the remaining ingredients. 
2.  Using your hands, form the mixture into 16 small patties.  Refrigerate until ready to use.
3.  Preheat oven to 350˚F.  Place a skillet over medium-low heat and add some olive oil.  Brown the sausages in two batches for about 2 minutes per side.  Place on a parchment-lined baking sheet and bake in the middle of the oven for about 10 minutes, or until fully cooked.

We've been hooked on Alfresco chicken sausages for several months and now we can use this alternative. Thanks for the recipe springboard and cooking instructions. I think I can lasso my husband into getting his hands into this recipe as he loves sausage. Our favorite Alfresco brand is the Buffalo Chicken so we will tweak this with Tapatío hot sauce and let you know how we did. if you like hot sauce and can find Tapatío near you give it a whirl. It's half the sodium of most hot sauces and the flavor is great!

Kate -- The chalkboard was at the Saturday Mill City Market this past weekend. The beef tongue tacos caught my eye. Growing up, almost every Saturday my mother made beef tongue for our lunch, and the following week we ate cold tongue sandwiches on white bread (with yellow mustard, of course!). I loved it! Don't think you could get me to eat tongue today.

Ha! Almost same scenario but at my Grandmother's house. The tongues were always better cold the next day in those white bread and French's yellow mustard sandwiches. I haven't eaten since those days either but it always brings me back on those rare occasions when I have a cold corned beef sandwich. I haven't seen tongue for sale at the meat counters in many years, and although it is a lean, boneless cut of beef I know I wouldn't be as fascinated peeling them myself as I was watching Grandma!

Mondays in our house are backwards day which means we eat dessert first followed by a breakfast dinner. This recipe would be perfect and I have a feeling my son these chicken sausage patties will be a hit with my son!
