This refreshing Lemon-Lime Mousse with Fresh Strawberries was the dessert I served at the bridal shower that was recently given for my daughter.  When I started planning the summer luncheon, fresh berry tarts were part of the menu.  But my daughter has just discovered she is gluten intolerant, and that changed everything.  I plan to start experimenting with gluten-free crusts, but until I find one I like, I thought I'd play-it-safe at this luncheon by making a citrus mousse for 16.


     I found the recipe for Lemon-Lime Mousse on local blogger and cookbook author Zoe Francois' site, Zoe Bakes.  The only thing I changed was to double the recipe, giving me enough for all of the guests, plus a little extra for an after party treat!
